Parmesan Garlic Chicken Mac and Cheese

Ingredients

For the Chicken:

  • 1 pound boneless, skinless chicken breasts or thighs, diced

  • 1 tablespoon olive oil or butter

  • 1 teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

For the Pasta:

  • 12 ounces elbow macaroni (or any short pasta)

  • Salt, for pasta water

For the Cheese Sauce:

  • 2 tablespoons unsalted butter

  • 3 cloves garlic, minced

  • 2 tablespoons all-purpose flour

  • 2½ cups whole milk (warm)

  • 1 cup shredded Parmesan cheese

  • 1 cup shredded mozzarella cheese

  • 1 cup shredded sharp cheddar cheese

  • Salt and pepper to taste

  • Optional: ¼ teaspoon red pepper flakes for heat


Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.

  2. Add pasta and cook according to package instructions until al dente.

  3. Drain and set aside.


Step 2: Cook the Chicken

  1. While the pasta cooks, heat 1 tablespoon oil or butter in a large skillet over medium heat.

  2. Add the diced chicken. Season with garlic powder, salt, and pepper.

  3. Cook for 5 to 7 minutes, or until chicken is cooked through and lightly browned.

  4. Remove from heat and set aside.


Step 3: Make the Garlic Cheese Sauce

  1. In a large saucepan, melt 2 tablespoons of butter over medium heat.

  2. Add the minced garlic and cook for about 1 minute, stirring frequently.

  3. Whisk in the flour and cook for 1 minute to form a roux.

  4. Slowly pour in the warm milk, whisking constantly to avoid lumps.

  5. Continue cooking and stirring until the mixture thickens, about 4 to 5 minutes.

  6. Reduce heat to low. Stir in the Parmesan, mozzarella, and cheddar cheese until melted and smooth.

  7. Season with salt, pepper, and red pepper flakes if using.


Step 4: Combine Everything

  1. Add the cooked pasta and chicken to the cheese sauce.

  2. Stir gently until everything is evenly coated and heated through.

  3. Taste and adjust seasoning if needed.


Step 5: Serve

  • Serve hot, optionally topped with extra Parmesan or chopped fresh parsley.


Optional Additions

  • Stir in cooked spinach, roasted broccoli, or sautéed mushrooms for added flavor and nutrition.

  • Top with buttered breadcrumbs and broil for 2 to 3 minutes for a crispy topping.

  • Use rotisserie chicken to save time.


Storage

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.

  • Reheat gently on the stove with a splash of milk to loosen the sauce.
