🍰 Old-Fashioned War-Time Cake

Old-fashioned war-time cake is a simple, moist, and flavorful cake that became popular during wartime due to limited access to ingredients like eggs, butter, and milk. It often relies on pantry staples like oil, vinegar, and molasses or spices to create a rich, satisfying dessert.

🧾 Ingredients (Makes 1 9-inch cake)

  • 2 cups all-purpose flour
  • 1 ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 1 cup sugar (white or brown)
  • ½ cup vegetable oil
  • 1 tbsp vinegar (white or apple cider)
  • 1 tsp vanilla extract
  • 1 cup water or strong brewed coffee
  • Optional: ½ cup raisins, chopped nuts, or shredded coconut

👩‍🍳 Instructions

1️⃣ Preheat Oven

  • Preheat oven to 350°F (175°C).
  • Grease and flour a 9-inch round or square baking pan.

2️⃣ Mix Dry Ingredients

  • In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.

3️⃣ Mix Wet Ingredients

  • In a separate bowl, combine sugar, oil, vinegar, vanilla, and water (or coffee).

4️⃣ Combine

  • Gradually add dry ingredients to wet ingredients, stirring until just combined.
  • Fold in optional raisins, nuts, or coconut if desired.

5️⃣ Bake

  • Pour batter into prepared pan.
  • Bake 30–40 minutes, or until a toothpick inserted in the center comes out clean.

6️⃣ Cool & Serve

  • Let cake cool completely before slicing.
  • Can be served plain, dusted with powdered sugar, or topped with a simple glaze.

💡 Tips

  • Coffee enhances the flavor of spices and gives depth to the cake.
  • Use oil instead of butter for a moist texture without eggs.
  • This cake keeps well and can be stored at room temperature for several days.
  • Perfect with tea or coffee for a nostalgic treat.

I can also give you a classic eggless war-time spice cake version with a molasses glaze that’s richer and even more authentic to wartime recipes.

Do you want me to provide that version?
