No-Bake Nutella Cake


Ingredients (serves about 8)

  • 300 grams digestive biscuits or graham crackers

  • 150 grams unsalted butter, melted

  • 400 grams Nutella (or any hazelnut chocolate spread)

  • 400 grams cream cheese, softened

  • 200 millilitres heavy cream (double cream), chilled

  • 100 grams powdered sugar

  • 1 teaspoon vanilla extract

  • Optional: chopped hazelnuts or chocolate shavings for garnish


Instructions

Step 1: Prepare the biscuit base

  1. Crush the digestive biscuits into fine crumbs using a food processor or by placing them in a sealed plastic bag and crushing with a rolling pin.

  2. Mix the biscuit crumbs with the melted butter until fully combined.

Step 2: Form the base

  1. Press the biscuit mixture firmly and evenly into the base of a 20 cm (8 inch) springform cake pan.

  2. Place the base in the fridge to chill and set while you prepare the filling.


Step 3: Make the Nutella filling

  1. In a large bowl, beat the softened cream cheese until smooth.

  2. Add Nutella and vanilla extract, mixing until fully combined and creamy.

  3. In a separate bowl, whip the heavy cream with powdered sugar until stiff peaks form.

  4. Gently fold the whipped cream into the Nutella and cream cheese mixture until smooth and well combined.


Step 4: Assemble the cake

  1. Remove the biscuit base from the fridge.

  2. Spoon the Nutella filling evenly over the base and spread it out with a spatula.

  3. Smooth the top and return the cake to the fridge.


Step 5: Chill the cake

  • Refrigerate the cake for at least 4 hours, preferably overnight, until firm.


Step 6: Serve

  1. Carefully remove the cake from the springform pan.

  2. Garnish with chopped hazelnuts, chocolate shavings, or a drizzle of Nutella if desired.

  3. Slice and serve chilled.
