These are classic yeast rolls perfect for dinner, sandwiches, or breakfast.

Homemade Rolls Recipe

Ingredients (Makes 12 rolls)

  • 500 grams (about 4 cups) all-purpose flour

  • 1 packet (7 grams or 2¼ teaspoons) active dry yeast or instant yeast

  • 1 teaspoon salt

  • 2 tablespoons sugar

  • 240 milliliters (1 cup) warm milk (about 38–40°C or 100–105°F)

  • 60 milliliters (¼ cup) warm water

  • 1 egg (room temperature)

  • 60 grams (¼ cup) unsalted butter, softened

  • Extra butter for brushing after baking

Instructions

Step 1: Activate the yeast

  1. In a small bowl, combine the warm water, warm milk, sugar, and yeast.

  2. Stir and let it sit for about 5 to 10 minutes until foamy.

  3. If using instant yeast, you can skip the proofing and mix it directly with the flour.

Step 2: Prepare the dough

  1. In a large mixing bowl, combine flour and salt.

  2. Add the egg, softened butter, and yeast mixture.

  3. Mix with a wooden spoon or dough hook until a rough dough forms.

Step 3: Knead the dough

  1. Knead the dough by hand on a floured surface for 8 to 10 minutes or use a stand mixer with a dough hook for 5 to 7 minutes.

  2. The dough should be smooth, elastic, and slightly tacky, but not sticky.

  3. Add a little more flour if the dough is too wet.

Step 4: First rise

  1. Place the dough in a lightly greased bowl.

  2. Cover with plastic wrap or a clean kitchen towel.

  3. Let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.

Step 5: Shape the rolls

  1. Punch down the dough to release the air.

  2. Divide it into 12 equal pieces (use a scale if you want uniform rolls).

  3. Shape each piece into a smooth ball by tucking the edges underneath.

  4. Place them in a greased baking pan or on a lined baking sheet, leaving a little space between each roll.

Step 6: Second rise

  1. Cover the rolls with a towel or lightly greased plastic wrap.

  2. Let them rise for about 30 to 45 minutes, or until puffy and nearly doubled in size.

Step 7: Preheat the oven

  1. Preheat your oven to 190°C (375°F) while the rolls are rising.

Step 8: Bake

  1. Bake the rolls in the preheated oven for 15 to 20 minutes, or until golden brown on top.

  2. Check for doneness by tapping the top; they should sound hollow.

Step 9: Brush with butter

  1. Remove from the oven and immediately brush the tops with melted butter.

  2. Let them cool slightly before serving.

Serving and Storage

  • Serve warm with butter, jam, or as a side to soups and stews.

  • Store in an airtight container for up to 3 days.

  • Rolls can be frozen after baking. Reheat in the oven before serving.
