Homemade Rolls Recipe
Ingredients (Makes 12 rolls)
-
500 grams (about 4 cups) all-purpose flour
-
1 packet (7 grams or 2¼ teaspoons) active dry yeast or instant yeast
-
1 teaspoon salt
-
2 tablespoons sugar
-
240 milliliters (1 cup) warm milk (about 38–40°C or 100–105°F)
-
60 milliliters (¼ cup) warm water
-
1 egg (room temperature)
-
60 grams (¼ cup) unsalted butter, softened
-
Extra butter for brushing after baking
Instructions
Step 1: Activate the yeast
-
In a small bowl, combine the warm water, warm milk, sugar, and yeast.
-
Stir and let it sit for about 5 to 10 minutes until foamy.
-
If using instant yeast, you can skip the proofing and mix it directly with the flour.
Step 2: Prepare the dough
-
In a large mixing bowl, combine flour and salt.
-
Add the egg, softened butter, and yeast mixture.
-
Mix with a wooden spoon or dough hook until a rough dough forms.
Step 3: Knead the dough
-
Knead the dough by hand on a floured surface for 8 to 10 minutes or use a stand mixer with a dough hook for 5 to 7 minutes.
-
The dough should be smooth, elastic, and slightly tacky, but not sticky.
-
Add a little more flour if the dough is too wet.
Step 4: First rise
-
Place the dough in a lightly greased bowl.
-
Cover with plastic wrap or a clean kitchen towel.
-
Let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.
Step 5: Shape the rolls
-
Punch down the dough to release the air.
-
Divide it into 12 equal pieces (use a scale if you want uniform rolls).
-
Shape each piece into a smooth ball by tucking the edges underneath.
-
Place them in a greased baking pan or on a lined baking sheet, leaving a little space between each roll.
Step 6: Second rise
-
Cover the rolls with a towel or lightly greased plastic wrap.
-
Let them rise for about 30 to 45 minutes, or until puffy and nearly doubled in size.
Step 7: Preheat the oven
-
Preheat your oven to 190°C (375°F) while the rolls are rising.
Step 8: Bake
-
Bake the rolls in the preheated oven for 15 to 20 minutes, or until golden brown on top.
-
Check for doneness by tapping the top; they should sound hollow.
Step 9: Brush with butter
-
Remove from the oven and immediately brush the tops with melted butter.
-
Let them cool slightly before serving.
Serving and Storage
-
Serve warm with butter, jam, or as a side to soups and stews.
-
Store in an airtight container for up to 3 days.
-
Rolls can be frozen after baking. Reheat in the oven before serving.
