Fluffy Milk Rolls


Ingredients (makes about 12 rolls)

  • 500 grams all-purpose flour (plus extra for dusting)

  • 7 grams (1 packet) instant yeast

  • 50 grams sugar

  • 1 teaspoon salt

  • 250 millilitres warm milk (about 40°C / 105°F)

  • 50 grams unsalted butter, softened

  • 1 large egg

  • Extra butter for brushing (optional)


Instructions

Step 1: Activate yeast

  1. In a small bowl, combine the warm milk and sugar.

  2. Stir in the yeast and leave for 5 to 10 minutes until foamy and activated.


Step 2: Mix dry ingredients

  1. In a large mixing bowl, combine the flour and salt.


Step 3: Make the dough

  1. Add the yeast mixture, softened butter, and egg to the dry ingredients.

  2. Mix to form a soft dough.


Step 4: Knead the dough

  1. Turn the dough onto a floured surface.

  2. Knead for about 8–10 minutes until the dough is smooth, elastic, and slightly tacky (not sticky).

  3. If using a stand mixer with a dough hook, knead for about 6–8 minutes.


Step 5: First rise

  1. Place the dough in a lightly greased bowl.

  2. Cover with a clean cloth or plastic wrap.

  3. Leave in a warm place to rise until doubled in size (about 1 to 1.5 hours).


Step 6: Shape the rolls

  1. Punch down the risen dough to release the air.

  2. Divide the dough into 12 equal pieces (about 60 grams each).

  3. Shape each piece into a smooth ball by folding edges under and pinching the seam.

  4. Place the rolls on a baking tray lined with parchment paper, leaving space between each.


Step 7: Second rise

  1. Cover the shaped rolls loosely with a cloth or lightly greased plastic wrap.

  2. Let them rise again for 30–45 minutes until puffed up.


Step 8: Preheat the oven

  • Preheat your oven to 190°C (375°F).


Step 9: Bake the rolls

  1. Optional: Brush the tops of the rolls with melted butter for a soft crust.

  2. Bake in the preheated oven for 15–18 minutes until golden brown.


Step 10: Cool and serve

  1. Remove the rolls from the oven and brush again with melted butter if desired.

  2. Let cool slightly on a wire rack before serving.
