Ingredients (serves 8)

  • 500 millilitres whole milk

  • 3 egg yolks

  • 2 tablespoons cornstarch

  • 75 grams sugar

  • 1 teaspoon vanilla extract

Alternatively, you can use store-bought custard (about 2 cups).

For the cream topping:

  • 300 millilitres heavy cream (double cream)

  • 1 tablespoon powdered sugar

  • ½ teaspoon vanilla extract

For garnish (optional):

  • Extra fresh berries

  • Grated chocolate or chocolate curls

  • Toasted nuts or flaked almonds


Instructions

Step 1: Prepare the sponge base

  1. Cut the sponge cake or ladyfingers into cubes or slices.

  2. Arrange them in the bottom of a glass trifle dish or large glass bowl.

  3. Sprinkle with sherry, brandy, or fruit juice, allowing it to soak in.

  4. Scatter the mixed fruits evenly over the sponge layer.


Step 2: Make the custard

  1. In a saucepan, whisk together egg yolks, sugar, and cornstarch.

  2. Slowly whisk in the milk.

  3. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens to a custard-like consistency.
