Here’s a tasty recipe for Crispy Parmesan Roasted Potatoes — golden, crunchy on the outside, tender inside, and loaded with cheesy, garlicky flavor!


Crispy Parmesan Roasted Potatoes

Ingredients:

  • 2 lbs (900g) baby potatoes or Yukon gold potatoes, cut into bite-sized pieces

  • 3 tablespoons olive oil

  • 1 teaspoon garlic powder or 3 cloves garlic, minced

  • 1 teaspoon dried Italian seasoning or dried rosemary/thyme

  • 1/2 cup grated Parmesan cheese

  • Salt and freshly ground black pepper, to taste

  • Fresh parsley or chives, chopped (for garnish)


Instructions:

  1. Preheat oven:
    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prepare potatoes:
    In a large bowl, toss the potatoes with olive oil, garlic (powder or minced), Italian seasoning, salt, and pepper until evenly coated.

  3. Roast potatoes:
    Spread potatoes out in a single layer on the baking sheet. Roast for about 20 minutes.

  4. Add Parmesan:
    Remove from oven, sprinkle Parmesan cheese evenly over the potatoes, and toss to coat. Spread them back out evenly.

  5. Finish roasting:
    Return to oven and roast for another 15-20 minutes, or until potatoes are golden brown and crispy. Stir halfway through for even cooking.

  6. Serve:
    Garnish with fresh parsley or chives and serve hot.
