Chinese Pepper Steak with Onions

Ingredients:

  • 1 lb (450g) flank steak or sirloin, thinly sliced against the grain

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce (optional, adds depth)

  • 1 teaspoon cornstarch

  • 2 tablespoons vegetable oil, divided

  • 1 large onion, sliced

  • 1 large green bell pepper, sliced

  • 3 cloves garlic, minced

  • 1 teaspoon freshly ground black pepper (or more to taste)

  • 1/2 teaspoon sugar

  • 1/4 cup beef broth or water

  • 1 tablespoon rice vinegar or Chinese black vinegar (optional, for tang)

  • 1 teaspoon sesame oil (optional)

  • Salt, to taste

  • Cooked steamed rice, for serving

Instructions:

  1. Marinate the beef:
In a bowl, combine sliced beef, soy sauce, oyster sauce, and cornstarch. Mix well and let marinate for at least 15 minutes.

  2. Cook the beef:
Heat 1 tablespoon vegetable oil in a large skillet or wok over high heat.
Add beef in a single layer and stir-fry quickly until just browned, about 2-3 minutes. Remove beef and set aside.

  3. Cook the veggies:
In the same skillet, add the remaining 1 tablespoon oil. Add sliced onions and bell peppers. Stir-fry until slightly softened but still crisp, about 3-4 minutes.
Add minced garlic and stir-fry for 30 seconds until fragrant.

  4. Combine:
Return beef to the skillet. Add black pepper, sugar, beef broth, and rice vinegar. Stir everything together and cook for another 2 minutes until the sauce thickens slightly.

  5. Finish:
Drizzle with sesame oil if using, adjust salt if needed, and give one last toss.

  6. Serve:
    Serve hot over steamed rice.
