Here is a complete step-by-step recipe for a Chicken and Potato Bake — a comforting, all-in-one oven meal made with tender chicken, golden potatoes, and a creamy or herby seasoning.


Chicken and Potato Bake


Ingredients (serves 4)

  • 4 boneless, skinless chicken thighs or breasts

  • 500 grams potatoes, peeled and cut into chunks or thick slices

  • 1 onion, sliced (optional)

  • 3 garlic cloves, minced

  • 3 tablespoons olive oil

  • 1 teaspoon paprika

  • 1 teaspoon dried thyme or rosemary

  • ½ teaspoon garlic powder

  • Salt and black pepper, to taste

  • 100 millilitres chicken broth or water

  • Optional: 100 grams grated cheese for topping

  • Optional: chopped parsley for garnish


Instructions

Step 1: Preheat the oven

  • Preheat your oven to 200°C (400°F).

  • Lightly grease a large baking dish.


Step 2: Prepare the potatoes

  1. Peel and cut the potatoes into bite-sized chunks or thick slices.

  2. In a bowl, toss them with 1 to 2 tablespoons olive oil, half the garlic, paprika, half the thyme or rosemary, salt, and pepper.

  3. Spread the potatoes evenly in the bottom of the baking dish.


Step 3: Prepare the chicken

  1. Pat the chicken dry with paper towels.

  2. Rub with 1 tablespoon olive oil, garlic powder, remaining thyme or rosemary, and remaining minced garlic.

  3. Season generously with salt and pepper.


Step 4: Assemble the bake

  1. Place the seasoned chicken pieces on top of the potatoes.

  2. Scatter sliced onions over the dish if using.

  3. Pour the chicken broth around (not over) the chicken to keep the dish moist.


Step 5: Bake

  1. Cover the baking dish with foil and bake for 30 minutes.

  2. Remove foil and continue baking uncovered for another 20 to 30 minutes, or until the chicken is fully cooked and the potatoes are golden and tender.

  3. If using cheese, sprinkle it on top during the last 10 minutes of baking and return to the oven until melted and bubbly.


Step 6: Rest and serve

  1. Let the dish rest for 5 minutes after removing from the oven.

  2. Garnish with chopped parsley if desired.

  3. Serve hot, directly from the baking dish.

  • You can add vegetables like carrots, bell peppers, or green beans to make it a complete one-pan meal.

  • For added creaminess, stir in a little sour cream or cream cheese to the broth before baking.
