Cherry Pie Bars Recipe

Ingredients (Makes about 24 bars)

For the crust and topping:

  • 1 cup (225 grams) unsalted butter, softened

  • 1¾ cups granulated sugar

  • 4 large eggs

  • 1 teaspoon vanilla extract

  • ½ teaspoon almond extract (optional)

  • 3 cups all-purpose flour

  • 1½ teaspoons baking powder

  • 1 can (21 ounces or about 600 grams) cherry pie filling

  • 1 cup powdered sugar

  • 2 tablespoons milk

  • ¼ teaspoon vanilla or almond extract


Instructions

Step 1: Preheat the oven

  1. Preheat your oven to 175°C (350°F).

  2. Grease a 9×13 inch (23×33 cm) baking pan or line it with parchment paper.

Step 2: Make the batter

  1. In a large bowl, cream the softened butter and sugar together until light and fluffy.

  2. Add the eggs one at a time, mixing well after each addition.

  3. Stir in the vanilla extract and almond extract if using.

  4. In a separate bowl, whisk together the flour, baking powder, and salt.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The batter will be thick.

  3. Drop spoonfuls of the remaining batter over the cherry filling. It won’t cover it completely, which is okay—leave some cherry showing.
