Cheesy Baked Potato Rounds

Ingredients (for 4 servings)

  • 3–4 medium potatoes (russet or Yukon gold work well)
  • 2–3 tbsp olive oil
  • Salt and black pepper to taste
  • 1 tsp garlic powder (optional)
  • 1 cup shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • 2 tbsp chopped fresh parsley or chives (for garnish)
  • Optional toppings: sour cream, bacon bits, or green onions

Instructions

  1. Preheat oven: 200°C (400°F).
  2. Prepare potatoes: Wash and slice potatoes into 1/4–1/2 inch thick rounds. Pat dry to remove excess moisture.
  3. Season: Toss the potato slices with olive oil, salt, pepper, and garlic powder.
  4. Bake potatoes: Arrange slices in a single layer on a baking sheet lined with parchment paper. Bake for 20–25 minutes until slightly tender.
  5. Add cheese: Sprinkle shredded cheese evenly over each potato round. Return to oven and bake for another 5–10 minutes, until the cheese is melted and bubbly.
  6. Garnish and serve: Sprinkle with parsley or chives. Add optional toppings like sour cream or bacon bits if desired. Serve warm.

Tips

  • For extra crispiness, flip the potato rounds halfway through the first bake.
  • You can mix in spices like paprika, cayenne, or Italian seasoning for a flavor twist.
  • These also work great with sweet potatoes!
