Here’s a delightful Blueberry Birthday Pie recipe — perfect for celebrating with a burst of sweet-tart blueberry filling and a flaky, buttery crust!


🥧 Blueberry Birthday Pie

Ingredients

For the crust (double crust for top and bottom):

  • 2 ½ cups (315 g) all-purpose flour

  • 1 tsp salt

  • 1 tbsp granulated sugar

  • 1 cup (226 g) unsalted butter, cold and cut into cubes

  • 6–8 tbsp ice water

For the blueberry filling:

  • 5 cups fresh or frozen blueberries

  • ¾ cup (150 g) granulated sugar (adjust to taste)

  • 3 tbsp cornstarch

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • ½ tsp ground cinnamon (optional)

  • Pinch of salt

For topping:

  • 1 egg, beaten (for egg wash)

  • 1 tbsp coarse sugar (optional, for sprinkling)


Instructions

  1. Make the crust:

    • In a large bowl, whisk flour, salt, and sugar.

    • Cut in cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.

    • Add ice water, 1 tbsp at a time, mixing gently until dough just comes together.

    • Divide dough into two disks, wrap in plastic, and chill at least 1 hour.

  2. Prepare the filling:

    • In a large bowl, gently toss blueberries with sugar, cornstarch, lemon juice, lemon zest, cinnamon, and salt. Let sit while rolling out crust.

  3. Assemble the pie:

    • Preheat oven to 375°F (190°C).

    • Roll out one dough disk on a floured surface to fit a 9-inch pie pan. Transfer to the pan and trim edges.

    • Pour blueberry filling evenly into crust.

    • Roll out second dough disk and cover pie. You can make a solid top crust or a lattice pattern.

    • Trim and crimp edges to seal. Cut slits in top crust to vent steam if solid top.

  4. Bake the pie:

    • Brush crust with beaten egg and sprinkle with coarse sugar if desired.

    • Bake for 45–55 minutes until crust is golden and filling is bubbly. If edges brown too quickly, cover them with foil.

  5. Cool & serve:

    • Let pie cool at least 2 hours before slicing to let filling set.

    • Serve plain or with whipped cream or vanilla ice cream.


Tips & Variations:

  • Use fresh or frozen blueberries (if frozen, no need to thaw).

  • Add a splash of vanilla extract or a tablespoon of bourbon to the filling for extra flavor.

  • For a sweeter or crunchier crust, sprinkle sugar on crust before baking.

  • You can make mini blueberry pies for individual servings.
