-
2 ½ cups (315 g) all-purpose flour
-
1 tsp salt
-
1 tbsp granulated sugar
-
1 cup (226 g) unsalted butter, cold and cut into cubes
-
6–8 tbsp ice water
For the blueberry filling:
-
5 cups fresh or frozen blueberries
-
¾ cup (150 g) granulated sugar (adjust to taste)
-
3 tbsp cornstarch
-
1 tbsp lemon juice
-
1 tsp lemon zest
-
½ tsp ground cinnamon (optional)
-
Pinch of salt
For topping:
-
1 egg, beaten (for egg wash)
-
1 tbsp coarse sugar (optional, for sprinkling)
Instructions
-
Make the crust:
-
In a large bowl, whisk flour, salt, and sugar.
-
Cut in cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
-
Add ice water, 1 tbsp at a time, mixing gently until dough just comes together.
-
Divide dough into two disks, wrap in plastic, and chill at least 1 hour.
-
-
Prepare the filling:
-
In a large bowl, gently toss blueberries with sugar, cornstarch, lemon juice, lemon zest, cinnamon, and salt. Let sit while rolling out crust.
-
-
Assemble the pie:
-
Preheat oven to 375°F (190°C).
-
Roll out one dough disk on a floured surface to fit a 9-inch pie pan. Transfer to the pan and trim edges.
-
Pour blueberry filling evenly into crust.
-
Roll out second dough disk and cover pie. You can make a solid top crust or a lattice pattern.
-
Trim and crimp edges to seal. Cut slits in top crust to vent steam if solid top.
-
-
Bake the pie:
-
Brush crust with beaten egg and sprinkle with coarse sugar if desired.
-
Bake for 45–55 minutes until crust is golden and filling is bubbly. If edges brown too quickly, cover them with foil.
-
-
Cool & serve:
-
Let pie cool at least 2 hours before slicing to let filling set.
-
Serve plain or with whipped cream or vanilla ice cream.
-
Tips & Variations:
-
Use fresh or frozen blueberries (if frozen, no need to thaw).
-
Add a splash of vanilla extract or a tablespoon of bourbon to the filling for extra flavor.
-
For a sweeter or crunchier crust, sprinkle sugar on crust before baking.
-
You can make mini blueberry pies for individual servings.
