2 medium potatoes, peeled & diced

Salt & black pepper, to taste

1½ cups frozen mixed vegetables (peas, corn, green beans, etc.)

1. Brown the beef:

In a large pot or Dutch oven, heat oil over medium-high heat.

Season beef with salt and pepper, then sear in batches until browned on all sides.

Remove and set aside.
2. Sauté aromatics:
