Classic, warm, and oh-so-comforting — Apple Pie is the ultimate dessert for any occasion. Here’s a straightforward recipe that nails that flaky crust and tender, spiced apple filling every time.


🍏🥧 Classic Apple Pie

🕒 Time: About 1.5–2 hours (including chilling and baking)
🍽 Serves: 8


🧾 Ingredients:

For the crust:

  • 2½ cups (315g) all-purpose flour

  • 1 tsp salt

  • 1 tbsp sugar

  • 1 cup (225g) unsalted butter, cold and cubed

  • 6–8 tbsp ice water

For the filling:

  • 6–7 medium apples (about 1.5 kg), peeled, cored, and sliced (Granny Smith, Honeycrisp, or a mix)

  • ¾ cup (150g) granulated sugar

  • ¼ cup (50g) brown sugar

  • 2 tsp ground cinnamon

  • ¼ tsp ground nutmeg

  • 1 tbsp lemon juice

  • 2 tbsp all-purpose flour or cornstarch (for thickening)

  • 1 tsp vanilla extract (optional)

  • Pinch of salt

For assembly:

  • 1 egg, beaten (for egg wash)

  • Sugar for sprinkling


👩‍🍳 Instructions:

1. Make the crust:

  • In a food processor or large bowl, combine flour, salt, and sugar.

  • Cut in the cold butter until mixture resembles coarse crumbs.

  • Gradually add ice water, 1 tbsp at a time, until dough just comes together.

  • Divide dough into two discs, wrap in plastic, and chill for at least 1 hour.

2. Prepare the filling:

  • In a large bowl, toss sliced apples with sugars, cinnamon, nutmeg, lemon juice, flour, vanilla, and salt.

  • Let sit while dough chills.

3. Roll out the dough:

  • On a lightly floured surface, roll one disc into a 12-inch circle for the bottom crust.

  • Transfer to a 9-inch pie dish, letting the excess hang over the edge.

4. Add filling and top crust:

  • Pour apple filling into the crust, mounding slightly.

  • Roll out the second dough disc and cover the pie.

  • Trim excess dough and crimp edges to seal.

  • Cut slits in the top crust for steam to escape (or do a lattice crust).

5. Bake:

  • Preheat oven to 220°C / 425°F.

  • Brush crust with beaten egg and sprinkle with sugar.

  • Bake for 15 minutes, then reduce oven to 180°C / 350°F and bake for another 40–50 minutes until crust is golden and filling bubbles.

  • If crust browns too fast, cover edges with foil.

6. Cool & serve:

  • Let pie cool at least 2 hours before slicing to let filling set.

  • Serve plain or with vanilla ice cream or whipped cream.


🌀 Variations:

  • Add raisins, walnuts, or caramel sauce to the filling.

  • Use a crumb topping instead of a top crust.

  • Make mini hand pies or turnovers for single servings.
