🧾 Ingredients:
For the crust:

2½ cups (315g) all-purpose flour

1 tsp salt

1 tbsp sugar

1 cup (225g) unsalted butter, cold and cubed

6–8 tbsp ice water
For the filling:

6–7 medium apples (about 1.5 kg), peeled, cored, and sliced (Granny Smith, Honeycrisp, or a mix)

¾ cup (150g) granulated sugar

¼ cup (50g) brown sugar

2 tsp ground cinnamon
-
¼ tsp ground nutmeg
-
1 tbsp lemon juice
-
2 tbsp all-purpose flour or cornstarch (for thickening)

1 tsp vanilla extract (optional)

Pinch of salt
For assembly:

1 egg, beaten (for egg wash)

1. Make the crust:

In a food processor or large bowl, combine flour, salt, and sugar.

Cut in the cold butter until mixture resembles coarse crumbs.
