Angel Beef Casserole

Ingredients:

  • 1 ½ lbs (700g) ground beef

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 2 cups mushrooms, sliced

  • 2 cups frozen mixed vegetables (peas, carrots, corn)

  • 1 can (10.5 oz) cream of mushroom soup (or cream of celery for a twist)

  • 1 cup sour cream or Greek yogurt

  • 1 cup shredded cheddar cheese

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon dried thyme

  • Salt and black pepper, to taste

  • 3 cups cooked egg noodles or pasta of choice

  • 1 cup crushed buttery crackers or fried onions (for topping)

Instructions:

  1. Preheat oven:
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish.

  2. Cook the beef mixture:
In a large skillet over medium heat, cook the ground beef, onion, and garlic until beef is browned and onion is soft. Drain excess fat.
Add mushrooms, cook for another 3-4 minutes until softened.

  3. Mix the sauce:
In a large bowl, combine cream of mushroom soup, sour cream, Worcestershire sauce, dried thyme, salt, and pepper.

  4. Combine everything:
Stir the cooked beef mixture, mixed vegetables, and cooked noodles into the sauce until well combined.

  5. Assemble casserole:
Transfer the mixture to the prepared casserole dish. Sprinkle shredded cheddar cheese evenly on top, then add crushed crackers or fried onions as a crunchy topping.

  6. Bake:
Bake uncovered for 30–35 minutes, until bubbly and golden on top.
