Salisbury steak

Here’s a classic and comforting Salisbury steak recipe you can make at home—juicy patties smothered in a rich mushroom gravy.


Ingredients

For the Patties:

  • 1 lb (450 g) ground beef (85% lean works best)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 1 egg
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste

For the Gravy:

  • 2 tbsp butter
  • 8 oz (225 g) mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Make the Patties:
    • In a bowl, mix ground beef, breadcrumbs, milk, onion, egg, Worcestershire sauce, salt, and pepper.
    • Form into 4 oval-shaped patties.
  2. Cook the Patties:
    • Heat a skillet over medium heat with a little oil.
    • Cook patties 4–5 minutes per side until browned. Remove from skillet and set aside.
  3. Make the Gravy:
    • In the same skillet, melt butter and sauté mushrooms until soft.
    • Sprinkle flour over mushrooms and stir to form a roux. Cook 1–2 minutes.
    • Slowly add beef broth, whisking to remove lumps. Add Worcestershire sauce, salt, and pepper.
    • Simmer until thickened, about 5 minutes.
  4. Combine & Simmer:
    • Return patties to the skillet with the gravy.
    • Simmer for 5–10 minutes so patties soak up the flavor.
  5. Serve:
    • Serve hot over mashed potatoes, rice, or buttered noodles.

Tips for Best Results

  • Use ground beef with some fat—too lean and the patties dry out.
  • Don’t overmix the meat; gentle mixing keeps patties tender.
  • For extra flavor, sauté onions with mushrooms for the gravy.
  • You can make the gravy richer with a splash of cream or milk at the end.
