Sauté onions and garlic in olive oil. Add ground meat and cook until browned. Stir in tomatoes, spices, and simmer until thick.

3. Make the béchamel sauce
Melt butter, whisk in flour, and gradually add milk to create a creamy sauce. Add eggs, nutmeg, and cheese.

4. Assemble the dish
Layer eggplant and meat sauce in a baking dish, then pour béchamel sauce on top.

5. Bake
Bake at 180°C / 350°F for 40–45 minutes until the top is golden.

  • Let it cool for 15–20 minutes before slicing.
  • Often served with salad or crusty bread.
