Ingredients (serves 4–6)

  • 2 lbs (900 g) small potatoes (red, Yukon gold, or baby potatoes)
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon dried herbs (rosemary, thyme, or Italian seasoning)
  • 1/2 cup chicken or vegetable broth (optional, for extra flavor)

Instructions

  1. Prepare the potatoes
    • Wash and, if desired, cut potatoes into halves or quarters for faster cooking.
    • Leave small baby potatoes whole.
  2. Season
    • Toss potatoes with olive oil (or butter), salt, pepper, garlic powder, and herbs.
  3. Transfer to slow cooker
    • Place seasoned potatoes in the slow cooker.
    • Pour broth over the potatoes if using (optional, helps keep them moist).
  4. Cook
    • Cover and cook on low for 4–5 hours or high for 2–3 hours, until potatoes are tender when pierced with a fork.
  5. Serve
    • Serve hot, optionally garnished with fresh parsley, grated Parmesan, or a pat of butter.

  • Even cooking: Cut larger potatoes into similar sizes.
  • Crispy edges: If you like a roasted texture, toss cooked potatoes under the broiler for 5 minutes before serving.
