Crispy Creamy Crinkle Cake is a trendy dessert made with thin pastry sheets baked until crispy and then soaked with a sweet creamy custard. It’s crunchy on top, soft inside, and very rich.


🍰 Crispy Creamy Crinkle Cake

Ingredients

  • 1 package Phyllo dough (thawed)
  • 1/2 cup melted butter

Custard mixture

  • 2 cups milk
  • 1/2 cup heavy cream
  • 3 eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

Syrup

  • 1/2 cup sugar
  • 1/2 cup water
  • 1 teaspoon lemon juice

Optional toppings:

  • Powdered sugar
  • Crushed pistachios
  • Honey drizzle

Instructions

1. Prepare the pastry

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a baking dish.
  3. Take each sheet of Phyllo dough and crinkle or fold it accordion-style.
  4. Place folded sheets upright in the baking dish until it is full.

2. First bake

  • Brush the top generously with melted butter.
  • Bake for 10–15 minutes until lightly golden and crisp.

3. Add the custard

  1. Whisk milk, cream, eggs, sugar, and vanilla.
  2. Pour the custard evenly over the baked pastry.

4. Second bake

  • Bake again for 30–35 minutes until the custard is set and the top is golden.

5. Prepare syrup

  1. Heat sugar, water, and lemon juice in a small saucepan.
  2. Simmer for about 5 minutes until slightly thick.

6. Finish the cake

  • Pour the warm syrup over the hot cake.
  • Let it soak and cool before serving.

✨ Tips

  • For extra flavor, add orange blossom water or rose water to the syrup.
  • Sprinkle pistachios or almonds on top for a Middle Eastern-style finish.
  • Best served slightly warm with tea or coffee.
