Gluten-free peach cobbler

Posted on March 12, 2026 by Admin

Here’s a delicious Gluten-Free Peach Cobbler 🍑 that’s warm, sweet, and perfect for summer (or anytime!):

Ingredients (Serves 6–8)

For the Peach Filling

  • 4 cups Peaches, peeled and sliced (fresh or thawed frozen)
  • ¼ cup Sugar (adjust to taste)
  • 1 tbsp Lemon Juice
  • 1 tsp Vanilla Extract
  • 1 tsp Cornstarch (to thicken)

For the Gluten-Free Topping

  • 1 cup Gluten-Free All-Purpose Flour
  • ½ cup Sugar
  • 1 tsp Baking Powder
  • ¼ tsp Salt
  • ¼ cup Butter, melted
  • ½ cup Milk (dairy or plant-based)
  • 1 tsp Vanilla Extract

Instructions

1. Preheat Oven

  • Preheat to 350°F (175°C) and lightly grease a 9×9-inch baking dish.

2. Prepare Peach Filling

  1. In a bowl, mix peaches, sugar, lemon juice, vanilla, and cornstarch.
  2. Pour the mixture into the prepared baking dish.

3. Make the Topping

  1. In a separate bowl, combine gluten-free flour, sugar, baking powder, and salt.
  2. Stir in melted butter, milk, and vanilla until a thick batter forms.

4. Assemble

  • Drop spoonfuls of the batter over the peach mixture. It doesn’t need to cover completely; it will spread while baking.

5. Bake

  • Bake for 35–40 minutes until topping is golden and the filling is bubbling.

6. Serve

  • Let cool for 10–15 minutes. Serve warm with Vanilla Ice Cream or whipped cream if desired.

✅ Tips

  • Use fresh or frozen peaches depending on the season.
  • Add a ½ tsp cinnamon or nutmeg to the topping for extra warmth.
  • For a richer topping, replace some milk with cream or yogurt.
