Pork chops and scalloped potatoes

Ingredients (Serves 4)

For the Pork Chops

  • 4 Pork Chops, about ¾–1 inch thick
  • Salt and pepper, to taste
  • 2 tbsp Olive Oil or butter
  • 1 tsp Paprika (optional)

For the Scalloped Potatoes

  • 4–5 medium Potatoes, peeled and thinly sliced
  • 1 Onion, thinly sliced
  • 2 cups Milk or half milk/half cream for richer flavor
  • 2 tbsp Butter
  • 2 tbsp All-Purpose Flour
  • 1–1½ cups Cheddar Cheese, shredded
  • Salt, pepper, and pinch of Nutmeg (optional)

Instructions

1. Prepare the Oven & Pan

  • Preheat oven to 375°F (190°C).
  • Grease a baking dish for scalloped potatoes.

2. Make the Scalloped Potatoes

  1. In a saucepan, melt butter over medium heat.
  2. Stir in flour to make a roux, cook 1–2 minutes.
  3. Slowly whisk in milk, cooking until slightly thickened.
  4. Add ½–¾ of the cheese, season with salt, pepper, and nutmeg.
  5. Layer potatoes and onions in the baking dish, pouring sauce between layers.
  6. Top with remaining cheese.

3. Bake the Potatoes

  • Cover with foil and bake 30–35 minutes.
  • Remove foil and bake another 15–20 minutes until golden and bubbly.

4. Cook the Pork Chops

  • Season pork chops with salt, pepper, and paprika.
  • Heat oil or butter in a skillet over medium-high heat.
  • Sear chops 3–4 minutes per side until golden brown.
  • Finish in the oven at 375°F for 5–10 minutes, until internal temp 145°F (63°C).

5. Serve

  • Plate a pork chop with a serving of scalloped potatoes.
  • Garnish with fresh parsley or thyme if desired.

  • For extra creamy potatoes, soak sliced potatoes in cold water for 15 minutes before cooking to remove excess starch.
  • Add garlic or thyme to the sauce for extra flavor.
  • Can be prepared ahead and baked when ready for a convenient meal.
