Honey Mustard Chicken with Roasted Asparagus and Cheese is a simple, flavorful meal that combines sweet, tangy chicken with roasted vegetables and melted cheese. It’s great for a quick dinner and can be made in one pan. 🍗🥦🧀


Ingredients

For the Chicken

  • 2–3 chicken breasts
  • 2 tbsp honey
  • 2 tbsp mustard (Dijon or yellow)
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)

For the Asparagus

  • 1 bunch asparagus, trimmed
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • ½ cup shredded mozzarella or parmesan cheese

Instructions

  1. Preheat Oven
    Heat oven to 400°F (200°C) and line a baking sheet or casserole dish.
  2. Prepare the Honey Mustard Sauce
    In a bowl, mix honey, mustard, olive oil, garlic, salt, pepper, and paprika.
  3. Prepare the Chicken
    Place chicken breasts in a baking dish and coat them with the honey mustard mixture.
  4. Add the Asparagus
    Arrange asparagus around the chicken. Drizzle with olive oil and sprinkle with salt and pepper.
  5. Bake
    Bake for 20–25 minutes, until the chicken is cooked through.
  6. Add Cheese
    Sprinkle cheese over the asparagus (and chicken if you like) and bake another 3–5 minutes until melted.
  7. Serve
    Serve hot with rice, potatoes, or a simple salad.

Tips

  • Add lemon juice before serving for extra freshness. 🍋
  • Use parmesan cheese for a sharper flavor.
  • If the chicken breasts are thick, slice them in half to cook faster.
