Beer Braised Brats

Beer-Braised Brats are juicy sausages slowly cooked in beer with onions and spices, then usually finished on a grill or pan for a slightly crispy outside. They’re a classic comfort dish often served in buns with mustard and sauerkraut. 🌭🍺


Ingredients

  • 6 bratwurst sausages
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 2 cups beer (lager or pilsner works best)
  • 1 tsp mustard (optional)
  • ½ tsp black pepper
  • 6 brat buns
  • Optional toppings: sauerkraut, mustard, grilled onions, pickles

Instructions

  1. Cook Onions
    In a large skillet or pot, melt butter over medium heat.
    Add sliced onions and cook for about 5 minutes until soft.
  2. Add Brats and Beer
    Place bratwurst in the pan with onions.
    Pour beer over them until mostly covered.
    Add garlic and pepper.
  3. Simmer
    Let the brats simmer for 15–20 minutes. This cooks them through and infuses them with flavor.
  4. Brown the Brats
    Remove brats from the beer mixture and grill or pan-sear for 2–3 minutes per side until nicely browned.
  5. Serve
    Place brats in buns and top with onions, mustard, sauerkraut, or your favorite toppings.

Tips

  • Dark beer gives a richer flavor, while lighter beer keeps the taste milder.
  • You can add bell peppers to cook with the onions.
  • The leftover beer-onion mixture makes a great topping for the brats.
