Sliced Meatloaf Recipe
Ingredients (Serves 6 to 8)
For the meatloaf:

1½ pounds (about 700 grams) ground beef (80/20 or 85/15)

1 cup breadcrumbs (plain or seasoned)

1 small onion, finely chopped

2 cloves garlic, minced

½ cup milk

2 eggs, lightly beaten

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

½ teaspoon black pepper

½ teaspoon dried thyme or Italian seasoning (optional)
For the topping:

½ cup ketchup

2 tablespoons brown sugar

1 tablespoon mustard or Worcestershire sauce (optional)
Instructions
Step 1: Preheat the oven

Preheat your oven to 175°C (350°F).

Line a baking sheet with parchment paper or lightly grease a loaf pan.
Step 2: Prepare the meat mixture

In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, garlic, milk, eggs, ketchup, Worcestershire sauce, salt, pepper, and herbs.

Mix gently using your hands or a large spoon until fully combined. Avoid overmixing to keep the meatloaf tender.
Step 3: Shape the loaf
Option A: Free-form method

Transfer the meat mixture onto the lined baking sheet.

Shape it into a loaf about 8 inches long and 4 inches wide.
Option B: Loaf pan method -
Press the meat mixture evenly into a greased 9×5 inch loaf pan.
Step 4: Prepare and add the topping

In a small bowl, mix together ketchup, brown sugar, and mustard or Worcestershire sauce (if using).

Spread the mixture evenly over the top of the meatloaf.
Step 5: Bake

Place the loaf in the preheated oven.

Bake for 55 to 65 minutes, or until the internal temperature reaches 70°C (160°F).

If the top browns too quickly, cover loosely with foil.
Step 6: Rest and slice

Remove the meatloaf from the oven and let it rest for 10 minutes. This helps the juices redistribute.
