Caramel Pecan Turtles

Here’s a delicious Caramel Pecan Turtles recipe—classic chocolate candies with pecans and caramel:


Ingredients (makes ~20–25 turtles):

  • 1 cup pecan halves (about 20–25)
  • 1 cup semi-sweet chocolate chips or chopped chocolate
  • ½ cup caramels (soft caramels or caramel squares)
  • 2 tablespoons heavy cream or milk
  • Optional: sea salt for sprinkling

Instructions:

  1. Prepare a baking sheet:
    • Line with parchment paper or a silicone mat.
  2. Arrange pecans:
    • Place 3–4 pecan halves in a cluster for each candy on the baking sheet.
  3. Melt chocolate:
    • In a microwave-safe bowl or double boiler, melt chocolate until smooth.
  4. Melt caramel:
    • Unwrap caramels and melt with 2 tablespoons of cream over low heat or in the microwave, stirring until smooth.
  5. Assemble turtles:
    • Spoon a small amount of melted chocolate onto each pecan cluster to hold them together.
    • Top each cluster with a dollop of melted caramel.
    • Optional: sprinkle a tiny pinch of sea salt on top.
  6. Chill:
    • Refrigerate for at least 30 minutes until chocolate and caramel are set.
  7. Serve:
    • Peel off parchment and enjoy. Store in an airtight container in the fridge for up to 1 week.

Tips:

  • For easier handling, pipe the chocolate and caramel with a spoon or small zip-top bag with the tip cut off.
  • Use toasted pecans for extra flavor.
  • Can be made with dark chocolate for a richer, less sweet version.
