Red onion marmalade

Here’s a simple and flavorful recipe for red onion marmalade—sweet, tangy, and perfect for cheese boards, burgers, or sandwiches.


Ingredients:

  • 2 large red onions, thinly sliced
  • 2 tablespoons olive oil
  • 3 tablespoons brown sugar (or adjust to taste)
  • 3 tablespoons balsamic vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: 1 teaspoon fresh thyme or rosemary

Instructions:

  1. Heat the oil in a medium saucepan over medium heat.
  2. Add the sliced onions and a pinch of salt. Cook gently for 10–15 minutes, stirring occasionally, until softened.
  3. Add the sugar and vinegar, stirring well to coat the onions.
  4. Reduce the heat to low and simmer for 20–25 minutes, stirring occasionally, until the onions are caramelized and jam-like.
  5. Season with black pepper and optional herbs. Taste and adjust sugar or vinegar if needed.
  6. Cool and store in a sterilized jar in the fridge for up to 2 weeks.

Tip: This marmalade is fantastic on grilled cheese, with roasted meats, or even stirred into mashed potatoes for a sweet-savory twist.
