Apple Slab Pie Recipe

Ingredients

For the crust:

  • 2½ cups all-purpose flour

  • 1 teaspoon salt

  • 1 tablespoon sugar

  • 1 cup (2 sticks) unsalted butter, cold and cut into cubes

  • 6 to 8 tablespoons ice water

For the filling:

  • 6 to 7 medium apples (about 1.5 kg), peeled, cored, and sliced

  • ¾ cup granulated sugar

  • ¼ cup brown sugar

  • 2 tablespoons lemon juice

  • 1½ teaspoons ground cinnamon

  • ¼ teaspoon ground nutmeg

  • ¼ teaspoon salt

For assembling:

  • 1 egg, beaten (for egg wash)

  • 1 tablespoon sugar (for sprinkling)


Instructions

Step 1: Make the pie dough

  1. In a large bowl, whisk together the flour, salt, and sugar.

  2. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

  3. Add the ice water one tablespoon at a time, mixing gently with a fork until the dough begins to come together.

  4. Divide the dough into two portions, shape each into a rectangle, wrap in plastic, and chill for at least 1 hour.

Step 2: Prepare the apple filling

  1. While the dough chills, place the sliced apples in a large bowl.

  2. Add granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, salt, and cornstarch.

  3. Toss to coat the apples evenly. Set aside.

Step 3: Roll out the bottom crust

  1. Preheat oven to 200°C (400°F).

  2. On a floured surface, roll out one portion of the dough into a rectangle large enough to fit a 10 x 15 inch (25 x 38 cm) rimmed baking sheet.

  3. Gently transfer the dough to the baking sheet, pressing it into the corners and letting a little hang over the edges.

  1. Spread the prepared apple filling evenly over the bottom crust.

  1. Brush the top crust with the beaten egg.
