Creamy Shrimp Bisque; Shrimp and Grits

Here are two classic shrimp dishes: Creamy Shrimp Bisque (a smooth, rich soup) and Shrimp and Grits (a hearty Southern-style meal).


Creamy Shrimp Bisque

Ingredients

  • 450 g (1 lb) shrimp, peeled and deveined
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 small carrot, diced
  • 2 tbsp flour
  • 3 cups seafood or chicken broth
  • 1 cup heavy cream
  • 1 tbsp tomato paste
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook shrimp shells (optional for flavor)
    • Simmer shrimp shells in broth for about 10 minutes, then strain.
  2. Sauté vegetables
    • Melt butter in a pot.
    • Cook onion, garlic, and carrot until soft.
  3. Make the base
    • Stir in flour and cook 1 minute.
    • Add tomato paste and paprika.
  4. Add broth
    • Slowly pour in the broth while stirring. Simmer 10 minutes.
  5. Blend
    • Blend the soup until smooth.
  6. Finish
    • Add cream and shrimp. Cook 3–4 minutes until shrimp are pink.
  7. Serve
    • Garnish with parsley and serve with crusty bread.

Shrimp and Grits

Ingredients

For the Grits

  • 1 cup grits
  • 4 cups water or chicken broth
  • 2 tbsp butter
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper

For the Shrimp

  • 450 g shrimp, peeled and deveined
  • 4 slices bacon, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp paprika
  • 1 tbsp lemon juice
  • 2 tbsp chopped green onions

Instructions

1. Cook the Grits

  1. Bring water or broth to a boil.
  2. Add grits and reduce heat.
  3. Cook 15–20 minutes, stirring occasionally.
  4. Stir in butter, cheese, salt, and pepper.

2. Cook the Shrimp

  1. Cook bacon in a skillet until crispy.
  2. Add garlic and shrimp to the bacon fat.
  3. Season with paprika, salt, and pepper.
  4. Cook 2–3 minutes per side until shrimp turn pink.
  5. Add lemon juice.

3. Serve

  • Spoon creamy grits into bowls.
  • Top with shrimp and bacon mixture.
  • Garnish with green onions.

✅ Tip: For extra flavor in shrimp dishes, cook the shrimp just until pink—overcooking makes them tough.
