Creamy Peach Pudding


Ingredients (serves 4–6)

  • 4 large ripe peaches (or 1 can of peach slices, drained)

  • 500 millilitres whole milk

  • 100 millilitres heavy cream

  • 100 grams granulated sugar

  • 40 grams cornstarch (cornflour)

  • 3 large egg yolks

  • 1 teaspoon vanilla extract

  • A pinch of salt

  • Optional: whipped cream and fresh mint leaves for serving


Instructions

Step 1: Prepare the peaches

  1. If using fresh peaches, peel them by blanching in boiling water for 30 seconds, then plunging into cold water. The skins should slip off easily.

  2. Slice the peaches thinly and set aside. Reserve a few slices for garnish if you like.


Step 2: Make the pudding base

  1. In a medium bowl, whisk together the sugar, cornstarch, egg yolks, and salt until smooth. Set aside.

  2. In a medium saucepan, combine the milk and cream. Heat gently over medium heat until just below boiling (small bubbles form around the edges). Do not boil.


Step 3: Temper the eggs

  1. Slowly pour about one-third of the hot milk mixture into the egg yolk mixture while whisking constantly to avoid curdling.

  2. Gradually pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture, whisking continuously.


Step 4: Cook the pudding

  1. Return the saucepan to medium heat.

  2. Cook the mixture, stirring constantly with a wooden spoon or whisk, until it thickens and comes to a gentle boil (about 5–7 minutes).

  3. Once thickened, remove from heat and stir in the vanilla extract.


Step 5: Combine peaches and pudding

  1. Gently fold most of the sliced peaches into the warm pudding, reserving some slices for garnish.


Step 6: Chill the pudding

  1. Pour the peach pudding into individual serving dishes or a large bowl.

  2. Cover with cling film, pressing it directly onto the surface of the pudding to prevent a skin from forming.

  3. Refrigerate for at least 2 hours until fully set and chilled.


Step 7: Serve

  1. Before serving, garnish with the reserved peach slices.

  2. Optionally, top with a dollop of whipped cream and a fresh mint leaf.
