🥔 Garlic Butter Soy Roasted Red Potatoes

These garlic butter soy roasted red potatoes are crispy on the outside, tender inside, and packed with savory, slightly umami flavor from the soy sauce. Perfect as a side dish for dinner!


🥘 Ingredients (Serves 4)

  • 1.5 lbs (700 g) red potatoes, quartered
  • 3 tbsp butter, melted
  • 2–3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp dried thyme or rosemary (optional)
  • Salt & pepper to taste
  • Fresh parsley for garnish

👩‍🍳 Instructions

  1. Preheat oven: 400°F (200°C).
  2. Prep potatoes: Wash and quarter red potatoes. Pat dry.
  3. Mix coating: In a bowl, combine melted butter, olive oil, soy sauce, minced garlic, herbs, salt, and pepper.
  4. Toss potatoes: Add potato quarters to the bowl and toss until evenly coated.
  5. Arrange on baking sheet: Place potatoes cut-side down for extra crispiness.
  6. Roast: Bake 30–35 minutes, turning halfway through, until golden and tender.
  7. Serve: Sprinkle with fresh parsley and enjoy warm.

💡 Tips

  • For extra crispiness, parboil potatoes for 5 minutes before roasting.
  • Add a pinch of smoked paprika or chili flakes for a smoky or spicy twist.
  • Can also be roasted in an air fryer at 400°F (200°C) for 20–25 minutes.
