Sausage and peppers

Here’s a classic way to make sausage and peppers, a hearty and flavorful Italian-American favorite:


Sausage and Peppers Recipe

Ingredients:

  • 1 lb (450 g) Italian sausages (mild or spicy)
  • 2–3 bell peppers (any color), sliced into strips
  • 1 large onion, sliced
  • 2–3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1 tsp dried oregano or Italian seasoning
  • Optional: 1/2 cup tomato sauce or crushed tomatoes for a saucier version
  • Fresh parsley for garnish

Instructions

  1. Cook the sausages:
    • Heat 1 tbsp olive oil in a large skillet over medium heat.
    • Add sausages and cook until browned on all sides (about 6–8 minutes).
    • Remove sausages and set aside.
  2. Sauté the vegetables:
    • In the same skillet, add remaining olive oil.
    • Add sliced peppers and onions, sauté for 5–7 minutes until softened.
    • Add garlic, salt, pepper, and oregano, cooking for another 1–2 minutes.
  3. Combine and simmer:
    • Slice the sausages into 1–2 inch pieces (optional) and return them to the skillet.
    • If using tomato sauce, add it now and stir to combine.
    • Cover and simmer for 10–15 minutes until sausages are cooked through and flavors meld.
  4. Serve:
    • Garnish with fresh parsley.
    • Serve hot over pasta, rice, or in hoagie rolls for a sandwich-style meal.

Tips:

  • For extra flavor, roast the peppers and onions in the oven at 425°F (220°C) for 15–20 minutes before adding the sausages.
  • Sweet Italian sausages balance spicy bell peppers nicely.
  • Add a splash of red wine while simmering for a deeper flavor.
