🐟 Baked Cod with Lemon and Herbs

Ingredients:

  • 4 cod fillets (about 6 oz / 170g each)

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 lemon (zested and juiced)

  • 2 tbsp fresh parsley, chopped

  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)

  • Salt and pepper, to taste

  • Lemon slices, for garnish


Instructions:

1. Preheat Oven

  • Preheat your oven to 400°F (200°C).

  • Lightly grease a baking dish or line with parchment paper.

2. Prepare the Marinade

  • In a small bowl, mix olive oil, garlic, lemon zest, lemon juice, parsley, dill, salt, and pepper.

3. Marinate the Cod

  • Place the cod fillets in the baking dish.

  • Spoon or brush the lemon-herb mixture evenly over each fillet.

4. Bake

  • Bake for 12–15 minutes, or until the fish flakes easily with a fork.

  • Cooking time depends on thickness; avoid overcooking to keep it tender.
