🍯 Caramel Chocolate Crunch Bars

🍽 Yields: 16 bars

⏱ Total Time: 20 minutes (plus chilling)

🧂 Ingredients:

For the Crunch Layer:

  • 3 cups crispy rice cereal (like Rice Krispies) or crushed graham crackers

  • 1/2 cup peanut butter (or almond/sunflower butter)

  • 1/2 cup light corn syrup or honey

  • 1/3 cup brown sugar

  • 1/4 cup unsalted butter

  • 1 tsp vanilla extract

For the Caramel Layer:

  • 1 cup soft caramels (about 25 store-bought caramels), unwrapped

  • 2 tbsp heavy cream or milk

For the Chocolate Topping:

  • 1 1/2 cups semi-sweet chocolate chips

  • 1 tbsp coconut oil or butter (for a smoother finish)

👩‍🍳 Instructions:

1. Prepare the Pan:

  • Line an 8×8-inch or 9×9-inch square baking pan with parchment paper, leaving overhang on the sides.

2. Make the Crunch Base:

  1. In a saucepan over medium heat, combine:

    • Butter, brown sugar, peanut butter, and corn syrup.

  2. Stir until the mixture is smooth and just begins to bubble.

  3. Remove from heat, stir in vanilla.

  4. Mix in the crisped rice cereal until evenly coated.

  5. Press mixture firmly into the prepared pan. Use a spatula or parchment to pack it down evenly.

3. Make the Caramel Layer:

  1. In a microwave-safe bowl, combine caramels and heavy cream.

  2. Microwave in 30-second bursts, stirring each time, until fully melted and smooth.

  3. Pour over the cereal layer and spread evenly.

4. Make the Chocolate Topping:

  1. Melt chocolate chips and coconut oil together (microwave or stovetop).

  2. Stir until smooth, then pour over caramel layer.

  3. Use a spatula to smooth the top.

5. Chill:

  • Refrigerate for at least 2 hours, or until completely set.

6. Slice & Serve:

  • Lift out using the parchment and cut into squares with a sharp knife.

  • Store in an airtight container in the fridge for up to 1 week.

🍫 Optional Add-Ins & Variations:

  • Sprinkle sea salt on top for salted caramel chocolate bars

  • Add chopped pretzels or toffee bits to the base for extra crunch

  • Use dark chocolate for a richer flavor

  • Make it nut-free by using sunflower seed butter
