🍪 No-Bake Salted Caramel Cookies

⏱ Total Time: 15 minutes + cooling

🍴 Makes: About 24 cookies

🧂 Ingredients:

  • 1 cup granulated sugar

  • 1/2 cup brown sugar, packed

  • 1/2 cup unsalted butter (1 stick)

  • 1/2 cup milk

  • 1/2 cup caramel sauce (store-bought or homemade)

  • 1/2 tsp vanilla extract

  • 1/2 tsp sea salt (plus extra for sprinkling)

  • 3 cups quick oats

  • Optional: 1/2 cup chopped pecans or mini chocolate chips

👩‍🍳 Instructions:

  1. Line a baking sheet with parchment paper or wax paper.

  2. In a medium saucepan over medium heat, combine:

    • Granulated sugar

    • Brown sugar

    • Butter

    • Milk
Stir constantly until the mixture comes to a rolling boil.

  3. Once boiling, cook for 2 minutes, stirring constantly to avoid burning.

  4. Remove from heat, then quickly stir in:

    • Caramel sauce

    • Vanilla extract

    • Sea salt

  5. Add the quick oats (and optional nuts or chips) and mix until fully coated.

  6. Use a tablespoon or cookie scoop to drop spoonfuls onto the prepared baking sheet.

  7. Sprinkle each cookie with a pinch of sea salt (optional but delicious).

  8. Let cool at room temperature for about 30–45 minutes or until set.

📝 Tips:

  • For softer cookies, reduce oats to 2 1/2 cups.

  • For a deeper caramel flavor, use dark brown sugar.

  • Store in an airtight container at room temperature for up to 1 week.
