Apple pie

Here’s a classic, homemade apple pie recipe with a flaky crust and warmly spiced filling.


🥧 Classic Apple Pie

Ingredients (1 double-crust 9-inch pie)

For the crust:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup (2 sticks) cold unsalted butter, cubed
  • 6–8 tablespoons ice water

For the filling:

  • 6–7 medium apples (about 2 1/2 pounds), peeled, cored, and sliced
    (Granny Smith, Honeycrisp, or a mix works best)
  • 3/4 cup granulated sugar
  • 2 tablespoons brown sugar
  • 2 1/2 tablespoons all-purpose flour (or cornstarch)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter, cut into small pieces (for dotting)

Instructions

1️⃣ Make the crust

  1. In a bowl, mix flour, salt, and sugar.
  2. Cut in cold butter until mixture resembles coarse crumbs with pea-sized pieces.
  3. Add ice water 1 tablespoon at a time, mixing just until dough comes together.
  4. Divide into two discs, wrap, and chill at least 1 hour.

2️⃣ Prepare the filling

In a large bowl, toss sliced apples with sugars, flour, cinnamon, nutmeg, lemon juice, and vanilla.

3️⃣ Assemble

  1. Preheat oven to 425°F (220°C).
  2. Roll out one dough disc and fit into a 9-inch pie dish.
  3. Add apple filling and dot with butter.
  4. Roll out second disc and place over top (full crust or lattice).
  5. Trim, seal, and crimp edges. Cut small vents if using full crust.
  6. Brush with a little milk or egg wash and sprinkle with sugar.

4️⃣ Bake

  • Bake at 425°F for 20 minutes.
  • Reduce heat to 375°F (190°C) and bake 30–40 more minutes, until crust is golden and filling is bubbling.
  • Cool at least 2 hours before slicing (helps filling set).

Tips for Success

  • Mix tart and sweet apples for deeper flavor.
  • If edges brown too fast, cover loosely with foil.
  • Let pie cool fully for clean slices.
