Here’s a simple and delicious Strawberry Crunch Bars recipe you can try at home. These are a no-bake treat with a crispy base, creamy layer, and sweet strawberry topping.


Ingredients

For the base:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the creamy layer:

  • 1 (8 oz) package cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

For the strawberry topping:

  • 1 1/2 cups fresh strawberries, chopped
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Optional crunchy topping:

  • 1/2 cup crushed cereal (like Rice Krispies) or chopped nuts

Instructions

  1. Prepare the base:
    • In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
    • Press the mixture firmly into the bottom of an 8×8-inch pan. Chill in the fridge while preparing the other layers.
  2. Make the creamy layer:
    • In a bowl, beat the softened cream cheese with powdered sugar and vanilla until smooth.
    • Spread evenly over the chilled base.
  3. Prepare the strawberry topping:
    • In a small saucepan over medium heat, combine chopped strawberries, sugar, cornstarch, and water.
    • Cook for 3–5 minutes, stirring constantly, until it thickens and becomes glossy.
    • Let it cool slightly, then pour over the cream cheese layer.
  4. Add crunch (optional):
    • Sprinkle crushed cereal or nuts over the top for extra texture.
  5. Chill and serve:
    • Refrigerate the bars for at least 2 hours to set.
    • Cut into squares and enjoy!

💡 Tip: For an extra indulgent version, drizzle melted white chocolate over the top before chilling.
