🥬 Keto Cajun Shrimp & Sausage Stuffed Cabbage

Servings: 4

Carbs: ~6–8g net carbs per serving (depending on sausage and sauce)

🦐 Ingredients:

For the filling:

  • 1 small head green cabbage (8–10 large leaves)

  • 1 tbsp olive oil or butter

  • ½ lb (225 g) raw shrimp, peeled & chopped

  • ½ lb (225 g) andouille sausage or smoked sausage, diced

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • ½ bell pepper, diced (optional, for flavor/color)

  • 1 tsp Cajun seasoning (more to taste)

  • Salt & pepper, to taste

  • ½ cup shredded mozzarella or Monterey Jack cheese (optional for binding)

For the sauce:

  • 1 cup crushed tomatoes or tomato sauce (look for low-sugar/keto-friendly brands)

  • ½ tsp Cajun seasoning

  • 1 tbsp heavy cream (optional, for creamier texture)

  • Salt to taste

🔪 Instructions:

1. Prep the cabbage:

  • Bring a large pot of water to a boil.

  • Gently peel off 8–10 cabbage leaves.

  • Boil leaves for about 2–3 minutes until just pliable.

  • Drain and set aside to cool.

2. Make the filling:

  • In a skillet, heat olive oil over medium heat.

  • Sauté onion, garlic, and bell pepper until softened.

  • Add chopped shrimp and sausage; cook until shrimp is just pink and sausage is browned.

  • Stir in Cajun seasoning, salt, and pepper.

  • Optional: Mix in shredded cheese for a more cohesive filling.

  • Remove from heat and let cool slightly.

3. Assemble the rolls:

  • Lay each cabbage leaf flat.

  • Place a scoop of filling in the center.

  • Fold sides in, then roll up tightly like a burrito.

  • Place seam-side down in a greased baking dish.

4. Make the sauce:

  • In a small saucepan, combine tomato sauce, Cajun seasoning, and cream.

  • Simmer for 5–7 minutes, adjusting seasoning to taste.

5. Bake:

  • Pour sauce over the cabbage rolls.

  • Cover with foil and bake at 175°C (350°F) for 25–30 minutes.

  • Remove foil and bake uncovered for 5–10 more minutes if you want a browned top.

🥄 Serving Ideas:

  • Serve with a dollop of sour cream or extra hot sauce.

  • Garnish with chopped green onions or parsley.

✅ Keto Tips:

  • Use sugar-free tomato sauce (check labels).

  • Skip bell pepper for stricter keto.

  • Add cauliflower rice to the filling if you want more bulk while staying low-carb.
