🍜 Mongolian Ground Beef Noodles

✅ Ingredients:

  • 10–12 oz noodles (lo mein, spaghetti, or ramen)

  • 1 lb ground beef

  • 1 tbsp oil (if beef is lean)

  • 4 cloves garlic, minced

  • 1 inch fresh ginger, grated (or 1 tsp ground)

  • ½ cup low-sodium soy sauce

  • ¼ cup brown sugar

  • ½ cup beef broth (or water)

  • 3 tbsp hoisin sauce

  • 1 tbsp sesame oil

  • 1½ tbsp cornstarch + 1½ tbsp water (slurry)

  • ¼ tsp red pepper flakes (optional for heat)

  • 3–4 green onions, sliced (for garnish)

  • Sesame seeds (optional garnish)

👨‍🍳 Instructions:

  1. Cook the noodles
Boil noodles according to package directions. Drain and set aside. Toss with a splash of sesame oil to prevent sticking (optional).

  2. Brown the beef
In a large skillet or wok over medium-high heat, cook the ground beef until no longer pink, breaking it apart. Drain excess grease if needed.

  3. Add aromatics
Stir in garlic, ginger, and red pepper flakes (if using). Sauté for 1 minute until fragrant.

  4. Make the sauce
In a bowl, mix soy sauce, brown sugar, beef broth, hoisin sauce, and sesame oil. Pour into the skillet with the beef. Stir to combine.

  5. Thicken the sauce
Add cornstarch slurry and stir. Let simmer 2–3 minutes until thickened and glossy.

  6. Toss in the noodles
Add cooked noodles to the skillet. Toss everything together until well coated and heated through.

  7. Garnish and serve
Top with sliced green onions and sesame seeds. Serve hot!

💡 Tips:

  • Add veggies like broccoli, shredded carrots, or bell peppers for a healthier version.

  • Want it spicier? Add chili paste or sriracha to the sauce.

  • Use ground chicken or turkey as a leaner alternative.
