Here’s a super easy pastry recipe that works great for pies, tarts, hand pies, or even savory dishes. It’s buttery, flaky, and made with just a few simple ingredients — no fancy tools or techniques needed.


🥐 Easy All-Butter Pastry Dough

🕒 Time:

  • Prep: 10–15 minutes

  • Chill: 30+ minutes
    🍽 Yields: Enough for 1 pie crust (double for a top and bottom)


🧾 Ingredients:

  • 1¼ cups (150g) all-purpose flour

  • ½ cup (115g) unsalted butter, cold and cubed

  • ¼ tsp salt

  • 2–4 tbsp ice water

1. Mix dry ingredients:

In a mixing bowl, whisk together flour and salt.

2. Cut in the butter:

Add the cold, cubed butter. Use a pastry cutter, fork, or your fingers to work it in until the mixture resembles coarse crumbs (pea-sized bits of butter are perfect).

3. Add ice water:

Sprinkle in 2 tbsp ice water and mix gently. Add more, 1 tbsp at a time, just until the dough holds together when pressed. Don’t overwork it.

4. Form the dough:

Bring the dough into a ball, flatten into a disc, wrap in plastic wrap, and chill for at least 30 minutes.

5. Use it:

Roll out on a lightly floured surface to fit your pie dish or recipe.


🥧 Baking Tips:

  • For blind baking (pre-baking the crust), prick the base with a fork, line with parchment, and fill with baking weights. Bake at 375°F (190°C) for 15–20 minutes.

  • You can add 1 tsp of sugar for sweet pies or tarts.
