Mashed Potato Pancakes are the ultimate way to turn leftover mashed potatoes into something crispy, golden, and delicious. They’re quick to make and perfect for breakfast, lunch, or as a savory side dish.


🥔 Mashed Potato Pancakes (Crispy & Cheesy Option)

🕒 Time: 15–20 minutes
🍽 Serves: 4–6


🧾 Ingredients:

  • 2 cups cold mashed potatoes (leftovers work great)

  • 1 large egg

  • ½ cup all-purpose flour

  • ½ cup shredded cheese (cheddar, mozzarella, or any melty kind)

  • 2 green onions, finely chopped (optional)

  • Salt & pepper, to taste

  • 1–2 tbsp butter or oil for frying


👨‍🍳 Instructions:

  1. Mix the batter:
    In a bowl, combine mashed potatoes, egg, flour, cheese, green onions, salt, and pepper.
    Mix until it forms a thick, scoopable dough. If too wet, add a little more flour.

  2. Heat the skillet:
    Heat a nonstick skillet over medium heat with a bit of butter or oil.

  3. Form pancakes:
    Scoop about ¼ cup of mixture and gently flatten into patties (about ½ inch thick).

  4. Cook:
    Fry 3–4 minutes per side, or until golden brown and crispy. Don’t crowd the pan. Flip carefully.

  5. Drain & serve:
    Remove to a paper towel-lined plate. Serve hot!

  • Top with sour cream, chives, or applesauce

  • Serve with bacon and eggs for brunch

  • Make mini versions for a fun appetizer with dipping sauce (like ranch or garlic aioli)
