Country smothered chicken is classic comfort food—pan-fried chicken covered in a rich onion gravy. Here’s a straightforward, home-style version you can make easily.

🧾 Ingredients

  • 4 chicken pieces (thighs or breasts)
  • 1 cup flour
  • Salt, black pepper, paprika (to taste)
  • 1 onion (sliced)
  • 2 cups chicken broth
  • 2–3 tbsp oil or butter

👩‍🍳 Instructions

  1. Season & coat
    • Season chicken with salt, pepper, paprika
    • Lightly coat in flour (this helps make gravy later)
  2. Pan-fry
    • Heat oil in a pan
    • Cook chicken until golden brown on both sides (not fully cooked yet)
    • Remove and set aside
  3. Cook onions
    • In the same pan, add sliced onions
    • Cook until soft and slightly caramelized
  4. Make gravy
    • Add a little leftover flour (from coating) into the pan
    • Stir for 1–2 minutes
    • Slowly add chicken broth while stirring to avoid lumps
  5. Smother
    • Return chicken to the pan
    • Cover and simmer for 20–25 minutes until chicken is tender and cooked through

🍽️ Serve with

  • Mashed potatoes
  • Rice
  • Roti or simple bread

  • Add garlic or chili flakes for extra flavor
  • For thicker gravy, simmer longer
  • For lighter version, skip deep frying and use less oil
