Here’s a simple, tasty recipe for zucchini muffins—soft, moist, and lightly sweet.

🧾 Ingredients (makes ~10–12 muffins)

  • 1 medium zucchini (grated)
  • 2 eggs
  • ½ cup sugar (or honey)
  • ½ cup oil (or melted butter)
  • 1½ cups flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon (optional)
  • 1 tsp vanilla essence
  • Pinch of salt

  1. Preheat oven to 180°C (350°F)
  2. Grate zucchini and lightly squeeze excess water
  3. In a bowl, mix eggs, sugar, oil, and vanilla
  4. Add grated zucchini
  5. In another bowl, mix flour, baking powder, baking soda, salt, cinnamon
  6. Combine wet + dry ingredients (don’t overmix)
  7. Pour into muffin tray
  8. Bake for 18–22 minutes until golden

  • Don’t squeeze zucchini too dry—moisture keeps muffins soft
  • Add chocolate chips or nuts for extra flavor
  • Store in an airtight container for 2–3 days
