Here’s a simple no-bake éclair cake recipe—easy, creamy, and perfect for dessert without using an oven.

🍰 No-Bake Éclair Cake

🥣 Ingredients

  • 2 packs graham crackers (or digestive biscuits)
  • 2 boxes instant vanilla pudding mix (about 90g each)
  • 3 cups cold milk
  • 1 container whipped cream (or 1 cup whipped topping)
  • 1 tub chocolate frosting (or melted chocolate ganache)

👩‍🍳 Instructions

1. Make the cream layer

  • Whisk pudding mix with cold milk until thick
  • Fold in whipped cream until smooth and fluffy

2. First layer

  • In a dish, place a layer of crackers/biscuits

3. Add filling

  • Spread half of the pudding mixture over crackers

4. Repeat layers

  • Add another layer of crackers
  • Add remaining pudding mixture
  • Finish with a final layer of crackers on top

5. Chocolate topping

  • Warm frosting slightly (so it spreads easily)
  • Spread evenly over top layer

6. Chill

  • Refrigerate for 6–8 hours (or overnight)
  • This helps crackers soften into cake-like texture

🍫 Result

  • Soft, creamy layers like pastry cream
  • Chocolate top like an éclair glaze
  • No baking needed at all

  • Use dark chocolate topping for richer taste
