Ingredients (makes 6–8 muffins)

  • ½ cup cooked sausage, chopped
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ cup milk
  • 1 egg
  • ¼ cup grated cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a muffin tin.
  2. Mix dry ingredients: flour, baking powder, salt, and pepper.
  3. Whisk wet ingredients: egg and milk.
  4. Combine wet and dry until just mixed—don’t overmix.
  5. Fold in sausage and cheese.
