Flourless Chocolate Cake Recipe

Ingredients (serves 6–8)

  • 200g dark chocolate (70% works best)
  • 100g butter
  • ¾ cup sugar
  • 3 eggs
  • ¼ cup cocoa powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven: 180°C (350°F). Grease and line a cake pan.
  2. Melt chocolate & butter: Use a double boiler or microwave in short bursts, stirring until smooth.
  3. Mix sugar & eggs: Beat until slightly thick and glossy.
  4. Combine: Slowly add melted chocolate mixture into the eggs, mixing gently.
  5. Add dry ingredients: Stir in cocoa powder, vanilla, and salt.
  6. Bake: Pour into pan and bake for 20–25 minutes. The center should be slightly soft.
  7. Cool: Let it cool completely—it firms up as it sets.

Tips for Perfect Texture

  • Don’t overbake—it should be slightly gooey in the center.
  • Use good-quality chocolate for the best flavor.
  • Chill for a few hours for a denser, truffle-like texture.

Serving Ideas

  • Dust with powdered sugar
  • Top with fresh berries
  • Add a dollop of whipped cream or ice cream
