Instructions

  2. Grease and line a square baking tin (about 20cm / 8 inch).
  3. Cream butter and sugar until pale and fluffy.
  4. Beat in eggs one at a time with a spoonful of flour to prevent curdling.
  5. Fold in remaining flour and vanilla. Add milk if batter is too thick.
  6. Pour into prepared tin and bake for 20–25 minutes, or until a skewer comes out clean. Let cool.

2. Add Jam and Coconut:

  1. Spread jam evenly over the cooled sponge.
  2. Sprinkle desiccated coconut generously on top.

3. Make the Pink Custard:

  1. In a saucepan, mix custard powder, sugar, and a splash of milk to make a smooth paste.
  2. Heat remaining milk until just boiling, then stir into custard paste.
  3. Cook gently, stirring constantly, until thickened.
  4. Add vanilla and a few drops of pink/red food coloring.

4. Assemble:

  1. Pour the warm pink custard over the jam and coconut layer.
  2. Allow to cool fully, then chill in the fridge for 1–2 hours.
  3. Cut into squares and serve.

  • Toast the coconut lightly for a nutty flavor.
