Chicken marsala

Posted on March 15, 2026 by Admin

Here’s a complete guide to Chicken Marsala, a classic Italian-American dish:

Chicken Marsala Overview

Chicken Marsala features thin chicken cutlets sautéed and cooked in a rich mushroom and Marsala wine sauce. It’s flavorful, elegant, and surprisingly easy to make at home.

  • Texture: Tender chicken with a silky, slightly sweet mushroom sauce
  • Flavor: Savory, earthy, and lightly sweet from the Marsala wine
  • Servings: 4

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 2–3 tbsp olive oil or butter, for sautéing
  • 8 oz (225 g) mushrooms, sliced
  • 3/4 cup Marsala wine (sweet or dry, depending on preference)
  • 3/4 cup chicken broth
  • 2 tbsp butter, optional (to finish the sauce)
  • 2 tbsp chopped fresh parsley, for garnish

Instructions

1. Prepare the Chicken

  1. Pound chicken breasts to 1/2-inch thickness for even cooking.
  2. Season both sides with salt and pepper.
  3. Dredge lightly in flour, shaking off excess.

2. Sauté Chicken

  1. Heat oil or butter in a large skillet over medium-high heat.
  2. Cook chicken 3–4 minutes per side until golden brown and just cooked through.
  3. Remove chicken from skillet and set aside.

3. Cook the Mushrooms

  1. In the same skillet, add mushrooms and sauté until softened and lightly browned.
  2. Optional: add a touch more butter for richness.

4. Make the Sauce

  1. Pour Marsala wine into the skillet, scraping up browned bits from the pan.
  2. Stir in chicken broth and simmer 5–7 minutes until sauce reduces slightly.
  3. Return chicken to the pan, simmer 2–3 minutes to heat through and coat with sauce.

5. Finish and Serve

  • Stir in a pat of butter for a silky finish if desired.
  • Garnish with chopped parsley.
  • Serve over mashed potatoes, pasta, or rice.

Tips for Perfect Chicken Marsala

  • Don’t overcook the chicken: Thin cutlets cook quickly; overcooking makes them dry.
  • Use good-quality Marsala wine: The wine flavor is key to the dish.
  • Mushroom choice: Cremini or white button mushrooms work well.
  • Optional extras: Add a splash of cream for a richer sauce or a sprinkle of thyme for extra aroma.

💡 Serving Ideas:

  • Over buttered noodles or fettuccine to soak up the sauce
  • With garlic mashed potatoes and a side of green beans
  • Paired with a light salad and crusty bread for a full Italian-style meal

If you want, I can also make a slow-cooker version of Chicken Marsala that keeps the chicken extra tender while developing deep, rich flavor.

Do you want me to do that?
